Traditionally, tsampa is mixed with only water to form a nourishing dough that can be eaten by hand. It has long been valued because it is nutritious, filling, easy to carry, and stores well, making it an essential food for nomadic families travelling across the mountains.


Today, tsampa remains one of the most recognizable foods in Tibetan culture and continues to be enjoyed in both traditional and modern recipes.

Family-Friendly Tsampa Pancakes Recipe

Ingredients

  • 2 cups tsampa (roasted barley flour)

  • 2 teaspoons baking powder

  • 1 tablespoon brown sugar or maple syrup

  • ½ teaspoon salt

  • 2 eggs

  • 2 cups milk (or your favourite dairy-free alternative)

  • 2 tablespoons melted butter or neutral oil

  • 1 teaspoon vanilla extract (optional)


Instructions

  1. Whisk together the all-purpose tsampa, baking powder, brown sugar, and salt.

  2. In another bowl, whisk together the eggs, milk, melted butter, and vanilla.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  4. Allow the batter to rest for 5–10 minutes so the tsampa absorbs some of the liquid.

  5. Heat a lightly greased skillet or griddle over medium heat.

  6. Pour approximately ¼ cup of batter for each pancake.

  7. Cook until bubbles appear on the surface, flip, and continue cooking until both sides are golden brown.

  8. Serve warm with fresh berries, sliced bananas, maple syrup, yogurt, or a drizzle of local Ontario honey.
